1 bunch red radishes, trimmed and finely sliced
2 Lebanese cucumbers, diced
1 punnet cherry tomatoes, quartered
2 tablespoons finely chopped mint leaves
1 lime, juiced
1 teaspoon extra virgin olive oil
2 tablespoon toasted sesame seeds
12–16 slices ocean trout
Put the sliced radishes, cucumber, tomatoes and mint into a bowl. Add the lime juice, olive oil and sesame seeds and toss to combine.
Arrange the smoked ocean trout on four plates and spoon over the salad. Serve with toasted thin sliced sour dough bread or crispbread.
